APRICOT DELIGHT COOKIES

This recipe came from my friend, Kimberly Houk. I don't have a picture of them now but will share one when I can.

Preheat oven to 350 degrees – rake in the middle position

2 cups of butter – melted
2 cups brown sugar
2 cups white granulated sugar
4 beaten eggs – just beat them in a cup with a fork
1 teaspoon baking soda
1 teaspoon baking power
1 teaspoon salt
2 teaspoons of pineapple extract or just use vanilla
4 cups flour
2 ½ chopped sweetened dried apricots – measure apricots after chopping – can use any dried fruit you have available
1 ½ dried coconut flakes
3 cups rolled oats (quick 1 minute)

Melt butter in a large microwave safe bowl (about 3 minutes on high) - add sugar and allow to cool a bit
Then add eggs, baking soda, baking power, salt and pineapple extract

Then add the flour, chopped pineapple, coconut, and rolled oats

Dough will be quite stiff, roll into balls and place on a greased cookie sheet
Bake at 350 degrees for 12 to 15 minutes – cool on cookie sheet for 2 minutes and then remove to a wire rake to cool completely – these cookies can be freezed, place in foil and then into zip lock bags
