Anne Campbell - Hominada

This is one that surprises people who don't think they like hominy...and a great thing that you can usually have most ingredients on hand if you have someone come by who you want to invite to a meal. I got it some 40 years ago from a friend in Texas who had a Mexican neighbor she got it from. It's been an old reliable for us.
Hominada (serves four or six, depending on appetite)
flour tortillas
Lettuce, shredded (maybe 1/4 to 1/2 head)
Grated cheddar cheese (1 pkg)
Corn chips (about 1/4 to 1/2 10-oz bag) (I like Fritos best)
3 thick cut strips bacon (4 or 5 if not thick cut)
1 whole onion, chopped (medium size)
1 Can of all-meat chili (no beans)
1 Can hominy (doesn't matter whether it's white or yellow)
1 Can Tomato Sauce.
Begin the bacon cooking in a deep pan, then add chopped onion and cook until onion is just beginning to brown. Drain grease. Add cans of chili, hominy, and tomato sauce and season to taste (no salt needed, just spicy stuff). Heat to bubbling.
Spread crushed corn chips on plates, sprinkle lettuce on top, then add the meat mix to cover the Frito/lettuce mix. Sprinkle cheese over it. Use the tortillas to help scoop the food on the fork. Yum!
