1 Yellow squash
1 Zucchini squash
1 Red bell pepper
Salt (correct amount for your family)
Lemon Pepper (correct amount for your family)
1/2 cup Rice Wine Vinegar
1/4 cup of Olive Oil
1 packet Splenda
Mix olive oil and rice wine vinegar, Splenda, lemon pepper and salt together. Let sit.
Slice Squash, Pepper, Cucumbers and Onion mix together in a bowl. Pour olive oil mixture over veggies. Stir all together and leave on counter for 1 hour. Then refrigerate over night. Next morning drain liquids.
Note: If this is made in the morning, you can eat by dinner time. You can leave it in the liquid overnight and then drain and eat the rest of the veggies.
