Rhonda's - Green Chile Quesadillas

Prep time: 30 minutes
Servings: 6-10 depending on how you cut them

For the filling:
Olive oil
1 pound green chiles, seeded and thinly sliced
(about 6 cups)
3 tablespoons water
3 garlic cloves, minced I buy them in a jar already minced

It says on the jar how much is three cloves
1/2 cup chopped fresh cilantro
1 teaspoon salt
1/4 teaspoon pepper


For the quesadillas:

6 9-inch flour tortillas
3/4 pound Your favorite cheese, shredded (approximately 1 1/2 cups)
6 tablespoons purchased fresh green salsa

To prepare the filling: Heat 3 tablespoons oil in heavy large skillet over medium heat. Add chiles, cover and cook until chiles are soft, adding water by tablespoonfuls if chiles become too dark, and stirring occasionally, about ten minutes. Uncover. Add garlic, and saute 1 minute. Transfer to medium bowl. Stir in cilantro, salt and pepper.

To prepare the quesadillas: Place 1/4 of chile mixture on one half of a whole tortilla. Top with a 1/4 cup of cheese and 1 tablespoon of salsa. Fold in half. Repeat. Set aside.

Heat 2 teaspoons oil, in heavy large skillet, over medium high heat. Place two filled tortillas in pan and cook uncovered until golden brown and cheese melts, about three minutes.

Transfer to cutting board. Cut each quesadilla into 6 pieces, and transfer to platter. Repeat with remaining quesadillas.

Yield : 6 quesadillas
These can be used as a main dish by adding a salad. Or they can be used as appetizers. I love them as a main dish... easy peezie.
