For the dressing:
¼ cup water
3 tbsp. peanut butter
3 tbsp. peanut oil
3 tbsp. rice vinegar
3 tbsp. light soy sauce
1 tsp. sugar
1 tbsp. sesame oil
1 lb. linguine or spaghetti
½ cup roasted peanuts, chopped
2 tbsp. sesame seeds, toasted
¼ cup minced green onions (about 1 bunch)
Make the linguine the day before and chill overnight in the fridge.
Make dressing: whisk all the ingredients together - it will look like a thin brown liquid.
When ready to serve, pour dressing over noodles to combine.
Pass the peanuts, sesame seeds, and chopped green onions at the table.
I double the peanut butter because I like a thicker sauce. This is a fantastic summer meal because you just throw it together and no oven required. You can add chicken, too, cooked and shredded. Leftovers are even better but there won’t be any. Don’t leave out the sesame oil – it makes the dish. Sometimes I use more sesame oil and less peanut oil. Mmm, mmm, mmm, tasty!
