Carol Cox - Katie's Summer Salad

2 cups diced cooked chicken (If you're in a hurry, canned chicken or canned turkey will also work well. Be sure to drain first before adding to the other ingredients.)

2 apples, peeled and diced

2 hard-boiled eggs, diced

2 medium carrots, shredded

Mayonnaise or salad dressing

DIRECTIONS
Combine chicken, apples, eggs, and carrots in a large mixing bowl. Add enough mayonnaise or salad dressing to bind the mixture according to your taste.

Arrange on a bed of lettuce or a combination of your favorite salad greens. (It's especially good with home-grown lettuce and baby spinach fresh from the garden!)

As a variation, add dried cranberries, halved grapes, or sunflower seeds.

    I was wondering... can you substitute mustard or ranch dressing for the mayo?

  2. Hi Rhonda! I haven't tried substituting either of those, but I think the ranch dressing would work fine if you add it sparingly and keep tasting as you go. Using mustard alone to bind the other ingredients together would probably be a little overwhelming (maybe even a lot overwhelming LOL), but you could certainly add it in to give the salad a bit more zip. For that matter, this is a great recipe to tweak and add ingredients to give it your own unique twist. Be creative, and have fun!
