Julie Carobini's CHOCOLATE CHILI

Happy Monday! Several years ago, I released my first novel into the world, a zany story about a laid-back beach girl who has doubts about her marriage. In Chocolate Beach, Bri Stone takes wallowing and chocolate eating to a new level when, in order to win her man's heart through his appetite, she takes a cooking class taught by a beefy Irishman named Chef Kelly. Satiny chocolate soup, glazed chocolaty potatoes, sumptuous chocolate chili, and other epicurean delights soon fill her repertoire (sans the "wee bit of Irish creme" dispensed so liberally by Chef Kelly =). Today I'm sharing Chocolate Chili!

1 medium onion, thinly sliced
½ green pepper, sliced
½ yellow or red pepper, sliced
2 tablespoons butter
1 clove garlic, minced
2 tablespoons chili powder
1 28 oz. can crushed tomatoes
3 cups canned kidney beans (variations: replace beans w/ground meat or ½ beans and ½ ground meat)
Salt, pepper to taste
1 oz. grated dark chocolate
1 ½ cups shredded cheddar cheese
3 cups cooked brown rice
Sliced olives

Sauté onion and peppers in butter until tender but not brown. Stir in garlic and chili powder. Add tomatoes, kidney beans, salt and pepper. Simmer 10 minutes. Add chocolate and simmer 1 minute more. Add cheese, and cook until completely melted. Spoon mixture over hot rice in bowls. Garnish with olives. Yum
