Chili Rellenos Casserole

This is what I'm fixing for dinner tonight:

Chili Rellenos Casserole

8 green chilies
8 slices of cheese (Monterey Jack or cheddar)
1 cup shredded cheese (I use the Mexican blend)
2 eggs
2T. Flour
3/4 c. milk
1/4 t. salt
black pepper
red pepper

Place a strip of cheese in each chili and place in a greased 8X12 pan. Beat eggs, gradually add flour and mix with a whisk. Beat until smooth and add milk, salt and pepper. Sprinkle grated cheese over chilies and then paprika. Pour egg mixture over all and bake at 350 for 45 minutes

  1. I made this. It was easy and delicious! I'm thinking if I add bacon or sausage, it would be a good breakfast dish :)
