Lemon Pepper Chicken Recipe


4-4oz Skinless boneless chicken breast
Cooking spray
2 Tb Grated lemon rind
1 ½ Tb Minced garlic
½ tsp Onion powder
2 Tb Light soy sauce
1/3 Cup lemon juice
1 Tb Olive oil
1 tsp Paprika
1/4 tsp Salt
1/4 tsp Pepper

Preheat oven to 350 degrees.

Take 4 pieces of aluminum foil each about 2 1/2 times the size of each chicken breast and spray foil on one side with cooking spray. Place one piece of chicken on each piece of aluminum foil. In a food processor or blender process together, lemon rind, minced garlic, onion power, soy sauce, lemon juice, olive oil and paprika.
Spread processed mixture over chicken, sprinkle with salt and pepper and wrap shut with aluminum foil. Bake for about 50 minutes until chicken cooked through and no longer pink in the center. Slice chicken into 1” thick slices and serve over salad.
