This weeks recipe is from Judy Gibson's kitchen. This is yummmy.
Cucumber and Onion Salad
1 Red Bell Peppers
1 of each Squash (raw yellow and green)
Salt (to taste)
Lemon Pepper (to taste)
1/4 cup Olive Oil
1/3 Cup unsweetened rice wine vinegar
one or two packages of Splenda
Chopped cucumbers, onions, red peppers, squash (yellow or green)
sprinkle with salt and a lot of lemon pepper
then mix about 1/4 cup olive oil and 1/3 cup of unsweetened rice wine vinegar with a packet or two of Splenda and pour over veggies. Let it marinate for a few
hours and it's yummy.
To spice this up you can add one jalapeno. Give it a try and let me know what you think.
